Job's Tears Salad

Ingredients:
  • 1 cup Job's Tears
  • 2 cups of water
  • 1 tsp salt
  • 1/2 cup of canned chick peas, drained and rinsed
  • 1/3 cup of pine nuts
  • 1/2 cup sundried tomatoes, chopped (dried, not in oil)
  • 1 red pepper, diced
  • 1/8 cup of coriander, chopped
  • 1/8 cup of parsley, chopped
  • 1 clove of garlic, minced
  • 1/2 small purple onion, finely chopped
  • 1 tbs of dried cumin powder
  • 2 tbs of olive oil
  • 2 tbs of fresh lemon juice
  • 2 tbs of balsamic vinegar

Soak Job's Tears for at least 30 minutes in water. Rinse, pouring off any hulls etc. until water is clear. While Job's Tears are cooking, lightly toast pine nuts in a dry frying pan. Chop and measure all other ingredients into a mixing bowl. Combine Job’s Tears, salt and water in a pot and bring to a boil. After it comes to a full boil, turn heat down and simmer for 2 more minutes or until Job’s Tears are tender yet firm. Remove from heat, drain but do not rinse. Let stand until warm. Finally, add warm Job's Tears to bowl, mixing it with the other ingredients. Makes 4-6 cups.

Job's Tears Chicken & Ginger Stew

Job's Tears has a delicious nutty flavour and a potent nutritional profile. It eliminates dampness from the body, relieves arthritis and rheumatism, has diuretic properties, and is a nutritious food that is beneficial to both men and women, young and old alike. In this recipe, it is cooked with chicken, mushrooms, and ginger to produce a tasty tonic stew.

Ingredients:
  • 1 fresh chicken
  • 2½ litres (10 cups) water
  • 30g Job's Tears seed (yi yi ren), soaked in water overnight and drained
  • 5 slices fresh ginger root, finely chopped
  • 300g fresh mushrooms, stems discarded, caps sliced
  • 3 spring onions, finely chopped
  • 2 tablespoons rice wine
  • 1 teaspoon salt, or to taste
  • ½ teaspoon freshly ground black pepper

Method:
1. Clean and wash the chicken and cut it into bite-sized pieces. Place the chicken in a stockpot with the water, Job's Tears seeds and ginger, and bring to a rolling boil.
Reduce the heat to low, cover and simmer for 2 hours until the chicken is tender.
2. Add all the other ingredients and return to a boil. Simmer for 2 more minutes and remove from the heat. Ladle into individual serving bowls and serve hot.
3. Garnish with chopped scallions, parsley or cilantro.

Adding a dash of Chinese sesame oil to each bowl before serving spikes the broth with a potent nutty flavour.



Job's Tears Brown Rice Congee

When combined with brown rice, it makes a tasty congee that may be used as a main dish for breakfast or an accompanying grain dish for lunch or dinner.

Ingredients:
  • 30g (1 cup) uncooked brown rice
  • 180 g (1 cup) Job's Tears seed
  • 2.2 litres (8 cups) water

1. Wash the brown rice and Job’s Tears in a couple of changes of water until the water runs clear and drain. Combine all the ingredients in a non-aluminum pot and soak overnight. (Ceramic pots are the best choice for herbal tonics)
2. Bring ingredients to a full boil. Reduce the heat to low and simmer covered, for 1 hour until the mixture begins to thicken. Remove from the heat and serve.

Savoury version: Add salt and a dash of sesame oil to individual serving bowls, then ladle the hot congee over and stir. Garnish with chopped scallions.

Sweet version: Add a little brown sugar, honey or maple syrup to individual serving bowls, ladle the hot congee over and stir.

Use 4 tablespoons of wild rice and 150 g (¾ cup) of brown rice for a richer taste and extra nutritional benefit. Chicken broth may be used instead of water to soak and cook the congee; in this case, soak the herb and grain in the refrigerator to keep the broth fresh.



Job's Tear & Fig Tea

Soak whole seeds in water for 30 minutes to soften remove any hulls.
Drain off water and rinse again as necessary.
Boil 15g of fig with 20g of Job's Tears in 1 litre of water until seeds are tender like rice.
Drink tea and eat seeds and fruit.



Job's Tears Cereal Drink / Smoothie

Ingredients:
  • 1 tablespoons of Job's Tears Powder
  • 2 cups of milk or soy milk
  • Add salt, sweetener, or flavor it by mixing it with chopped fruit. Other protein powders can be used with this recipe.

Method:
Lightly toast 20g Job's Tear Powder for 10 minutes on high heat.
Stir continuously until powder is just light brown.
Remove from heat and combine all ingredients in a blender. Blend well and drink.

Job's Tears Powder must be toasted before using in a smoothie.



Traditional Korean Juk (Porridge Soup)

Ingredients:
  • 2 cups Job's Tears powder
  • 1 cup of pureed sweet potato
  • 1 cup of pureed pumpkin
  • 1 cup of pureed apple
  • 1 cup of pre-cooked beans (kidney, turtle, etc.)
  • 5 cups of water
  • Salt to taste
  • Sweetener to taste (brown sugar, maple syrup, etc.)
  • Chopped nuts (pine, almond, peanut, etc.)

This can be made with a combination of rice, bean and/or nut powders.

Method:
1. Chop sweet potato, pumpkin, apple and put into a pot with water, boil until soft.
2. Drain water and pour into a blender with pre-cooked beans.
3. Add Job's Tears powder to 5 cups of water and simmer on medium heat. Continually whisk until mixture reaches a boil.
4. Stir puree into Job' Tears mixture and bring back up to a boil. Remove from heat but stir 2 more minutes to keep porridge smooth.
5. Flavor with salt and sweeten to taste. Sprinkle with pine nuts or other delights.

Makes 5 servings.



Job's Tears Paradise Cookies

Ingredients:
  • ½ cups all-purpose flour
  • ½ cup of Job’s Tears powder
  • ½ teaspoon baking soda
  • ¾ cup (packed) dark brown sugar
  • 1 cup salted butter, softened
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 8-ounce can crushed pineapple or 1 cup fresh finely chopped pineapple, well drained.
  • 1 tablespoon pineapple juice
  • ¼ cup sweetened shredded coconut

Method:

1) Preheat oven to 300°F
2) In medium bowl, combine flour and baking soda. Mix well with a wire whisk. Set aside.
3) In large bowl with an electric mixer blend sugars. Add butter and mix to form a grainy paste, scraping down the sides of the bowl.
4) Add egg and beat on medium speed until smooth.
5) Add the flour mixture and blend at low speed until just combined. Do not over mix.
6) Using a floured rolling pin, roll the chilled cookie dough floured board to a inch thickness. Cut circles with a 2-inch-diameter cookie cutter. Place circles of dough on an ungreased cookie sheet ½ inch apart. Continue rolling out and cutting dough scraps until all is used.
7 ) Bake for 12 minutes or until cookies begin to turn lightly brown at edges. Transfer immediately to a cool, surface with a spatula.

Makes about 3 dozen cookies.

Wear for 20 minutes then rinse off with warm water. Apply a natural moisturizer.
